Ok Chef Agencies are a little more expensive but you get what you pay for. How many of these Chefs have Liabillity cover when doing Freelance work ? At least with a Agency you are protected. They do back ground checks etc, How many have liability cover should any thing go wrong. And when freelance chefs invoice you how many of them do it correctly making sure you do not pick up the tax bill? There is a lot to be said about agencies good and bad.
